Tomato and Basil Pasta

1/2 lb pasta
2 Tbsp butter
2 garlic cloves, minced
1/2 tsp kosher salt
1/8 tsp crushed red pepper
1/4 cup tomatoes, chopped (the original recipe calls for sun-dried, but I prefer fresh)
3/4 cup heavy cream
1/4 cup fresh basil, chopped
1/2 cup freshly grated parmesan
cooked, diced chicken (optional)

Heat butter in large skillet over medium heat. Once melted, add garlic and sauté until slightly browned. Add salt, crushed red pepper, tomatoes, and cream. Simmer over medium heat for 2 minutes. Stir in basil and simmer for 1 minute longer. Add cheese, chicken and pasta to sauce. Stir to combine. Enjoy.

Serves 3-4
